State of California has regulations against gambling.

Choose a date to have your poker event
30 days prior to your date, contact the Office of
The Attorney General, Bureau Of Gambling Control
to obtain the appropriate paper work for a Legal
Fundraiser.
Find a location that will fit the needs of your

coworkers and tell them to spread the word.
Purchase some prizes for the final table, 1st, 2nd,
and 3rd, place winners. Keep a prize handy for the
first player out maybe Poker For Dummies, Barnes
and Noble
Sell table sponsors, this is a great way to obtain
the tables at a low cost or at no cost. Ask local
business or guests if they would like to sponsor
a table.
Designate a few people to be cashiers or money collection.
Set up a registration table with 1 or 2 personnel.
